Is this mirroring, as in body language?

This is a bit of a random question but it is something I've been wondering about.

There is a guy who I quite like, when I text him I usually start the text with 'hey you' or 'hey mister'. He used to start his with 'hi' or 'hiya'.

Now he starts his with 'hey you' too. Is this the same thing as mirroring someone you like, as in body language?

It's not mirroring... not exactly anyways. For lack of a better term, call it politeness.

That's just something people do unconsciously, to friends, co-workers... anyone. You tend to use same expressions, words etc as the person you're talking to, as it makes it easier to connect with that person. Call it politeness if you want. Doesn't have anything to do with attraction, although usually when we are attracted to someone yes, we tend to use same expressions as them. But it's not a surefire sign, sorry.
