I can tell you from both a personal been-there standpoint as well as professional, you can not date your boss. Not only is it frowned upon, in many companies it's just straight-up not allowed. It causes other employees to feel like you're being favoured, it gives her the opportunity to ruin your career if something bad happens between the two of you.
It sounds like you may have a chance here, but if you're serious about it, change departments in the company or find a new job first.

She may not be my boss in maybe 2-3 months, when she gets promoted and I get her position. ;-)
Doesn't that still make her your boss?
Nah, different department.
I'm really more concerned about how to approach her and spark something romantic, so soon after he break up.
I don't want to get stuck in the "friend zone." No one ever escapes the friend zone!
What happens if you two break up down the road and it's a nasty restraining order type of break. Could be difficult.
Doesn't make much sense to debate the million of "what ifs"
Do what you want then.
