Its gotta be fresh spinach. You'll laugh at how simple this is & ppl pay $5+ a bowl in sushi place. Delicious tho.
Gomae (boiled spinach salad):
Wash a big handful of fresh spinach leaves in cold water (about 10 oz). Put into big ziplock bag and close except for small opening for steam.
Microwave about 1.5 min. Remove spinach from microwave and *immediately* pour cold water into the bag to cool & keep the colour of the greens. Drain spinach and cut up into bite size pieces, then add the seasoning to taste (don't drown the leaves tho). Sprinkle with toasted sesame seeds.
While the spinach is cooking make the seasoning:
- 5 Tbsp ground white sesame
- 2 Tbsp sugar
- 6 Tbsp Dashi Soy
- can add a little sake (optional)
You can use regular soy sauce, but its not the same. In a pinch, I've used sesame oil and toasted sesame seeds, but again not the same. I like mine cold. So I make the seasoning ahead of time and put in the fridge.

Vash, it sounds like you were making matar paneer? Did the recipe have peas in it?
Anyway, I have a really good recipe for this from an indian friend if you want to try again... she also taught me to make (and fold!) samosas from scratch.

I know there are several paneer dishes (different colors) because I was looking for the recipe online, and I saw several of them had veggies in them, but the one I made was just a bunch of different spices, lots of cream, ginger, garlic, tomato paste, fried onion, and hunks of paneer.

Vash - here is the book I use most for Indian cooking. It was a gift, but I saw you can order it from Amazon. The recipes in this book are all amazing, and representative of the different regions of india. Worth buying if you are getting into this type of cooking.

what i really need is someone to suggest which dishes to make. i am not very familiar with indian dishes besides curry.
Order that book. Seriously. You need to get the right spices for the dishes to come out right. This was the main thing I learned from my friend. I had no idea what garam masala was, now its a staple in my freezer.
Try the mango chicken curry earlier in the thread. Its a thai curry, but its delicious. Not for peanut allergies, tho.
