Not washing hands after going number two is a bit disgusting. You said that he's professional. Maybe printing out material from credible websites that prove some of what is being said here will help. As stated above, his refusal to wash his hands can make you sick. I would gently explain that he has to think about both of you now and reiterate how much it bothers you. If you are levelheaded and fact based with your approach, he might see the light.

Even after taking a piss you should still wash your hands.. I remember watching something where they put a boll of peanuts on a bar and by the end of the night-they found loads of different traces of urine from different people. It is disgusting.
