I talk to my boyfriend on Skype as we can’t always see each other on weekdays. I can’t work out if he’s doing this on purpose or if he's just busy. I feel like the number of times he is starting to do this is just becoming a little excessive and I am starting to find it a little rude of him.

It has ONLY been happening recently, he talks to me for a little while and then always has to tell me he can't stay because he's doing SOMETHING, something he could probably just do any other time and stay with me if he really wanted to.

-Is he avoiding me?

These are the conversations (just the parts in which I feel like he's blowing me off):

What happened between 19:35 and 19:57? Did you cut that part of the conversation or did you not reply at all?

Where were you when he was talking to you? You basically started a conversation and then suddenly left.

Apart from these bits of conversation, do you chat every day for at least 45 minutes? If you see each other every weekend and text every day, it doesn't seem like a little time to me. Undoubtably you need to spend more actual time together, in person. And how about talking on the phone rather than chatting?

I always answer him, because it's starting to feel like that is all he is focusing on.
I have just specifically cut the parts of the conversation in which he tells me he is leaving, otherwise there would be too much.

Yes we do for, but sometimes only for 15 minutes and he hardly ever responds to texts.

So to sum it up: you talk on the phone for at least 15 minutes every day, you chat online for at least 45 minutes every day, and you see each other every weekend. It doesn't seem to me that you don't keep in touch often enough when you aren't together. On the other hand, I think that you don't actually see each other in person often enough. Why can't you get together during weekdays as well?

It seems like you are having communication issues. His reluctance to chat for a longer time and to text doesn't necessarily mean that he is bored with the relationship: maybe he just doesn't enjoy communicating that way. You need to tell him that it seems like he is avoiding you for some reason. Ask him if it's true, and if so, why. If he isn't avoiding you (and he just doesn't like to chat/text), try to find a meeting point halfway through. Perhaps you can talk on the phone for 15 minutes and text goodnight to each other one day, and chat for an hour the next day - I don't know, something like this.
