You both need to appologize to each other and it looks like you have. The next step is to forgive. Apparently, you two can't be drinking together because it is causing problems with your relationship (once is enough), so you should give that up. And never, ever drive if you have been drinking (it has been said before but bears repeating). Only one drink clouds judgment.

    1. Apologize for telling him off = right thing to do, its not dependent on his apology.

    2. What do you want from him? Figure this out for yourself and then talk to him.

Was his apology half-assed? Is that why it doesn't sit well? Or is it that you are offended he would even think to say it to you? Or are you worried it might be true? Are comments about one's family off-limits? If so, make that clear. Ask if he'd be comfortable with saying what he said to you to your parents. (if he is, you might have an asshole to dump, btw)
Second thoughts can generally be amended with judicious action; injudicious actions can seldom be recovered with second thoughts.

You pretty much hit all those point spot on. I'm just incredibly aggravated by it. Even after sitting on it for several days....and hell no he would never say that to my father and I know that for a fact.
